I love carbs, I love burgers, I love anything on a bun. These buns set the bar for all other buns. They're just enough sweet while buttery and fluffy, and perfect for any sandwich, burger, or whatever you like to put on a bun. This is an old recipe my mom had hiding in one of the many piles of yellowed magazine cutouts from the past century, and I am beyond happy to have found it for a night of pulled pork and perfect buns. Never will I ever buy packaged buns again.

Ingredients:
1 Cup Warm Water
1/2 Cup Whole Milk
5 Cups AP Flour
2 & 1/4 tsp Active Dry Yeast (Same amount in one packet)
1/2 tsp Sugar
1/4 Cup Warm Water
1/4 Cup Sugar
1 & 1/2 tsp Salt
1/4 Cup Softened Lard
Egg Wash (1 egg 1 Tbs water mixed together)
Sesame Seeds
How To:
1. Combine, Yeast, 1/2 tsp Sugar, and 1/4 Cup Warm Water. Gently mix till combined and let rest 10 min till foamy. (This is called blooming your yeast!)

2. Add 1 Cup Warm Water, 1/2 Cup Milk, and 2 Cups of the AP Flour to the yeast mixture and mix till combined. Cover and let rest for 30 min.
3. Add in the Lard, 1/4 Cup Sugar, and salt. Slowly add in the remaining 3 Cups of Flour. Once combined, place dough onto a lightly floured surface and knead until it feels like a baby's bottom, soft and smooth. This should take about 15 minutes, consider it your workout for the week.
4. Place your beautiful little ball of dough into an oiled bowl, cover and let rest for an hour. It should double in size. I prefer to use a large pot to proof my dough, just pop on the lid and you're good to go!
5. Now that your dough is all puffy and gorgeous, punch it out and cut into equal parts to create 2 in balls. It should make approx 16 buns. To create the buns take your hands face up and pinch the bottom of the dough with your pinky fingers while pulling one hand and pushing the other.
6. Place your lil balls of dough onto a baking sheet covered with parchment, they will grow so make sure you place at least 3 in in between. Cover and let rise for 30 minutes, they should double in size. (This is a perfect time to place your baking sheets on top of your stove while your oven preheats to 350 degrees.
7. Paint with egg wash, top with sesame seeds, and bake for 20-25 minutes.
8. Let cool on a cooling rack and tadaa you've got yourself some fluffy af buns. Enjoy!
